Number 10 out of 41! I can hardly believe we are a quarter of the way through! This recipe also called for another pastry cream (crème legere). I have learned to (almost) make them in my sleep without a recipe ! Most people were intrigued by this tart, and said it was one they enjoyed the most. So different. This is how it should look…

Fairly straight-forward; it has a shortbread crust, then a layer of strawberry coulis (basically a home-made jam-like filling), followed by a basil infused pastry cream, and topped with “grass” made of basil and shortbread crumbs. Add some fresh strawberries as a garnish-and we’re done ! The recipe said you could substitute a round pan if you didn’t have a square pan that size. I didn’t, but I improvised and baked the tart crust without a pan. I think it turned out just fine……
