Cherries and Chocolate….what’s not to love ? This recipe called for fresh cherries. There are none to be found this time of year. I would have stalled longer, but this is the last recipe in this group’s difficulty level; (one and a half macarons). So I substituted a jarred dark sweet cherry. Here’s the pic from the book……

The crust is an almond tart dough,and within it are layers of almond cream, then a chocolate cream studded with cherries and almonds, topped with a layer of Amaretto crème brulee. Mine looked like this…….

The cherries were soaked in brandy (of course) before adding to the chocolate cream. Just to point out how egg-centric the French are, I’ve been taking note of my egg usage. It took 8 eggs, mostly yolks to make this dessert, and seven for the last one. Add in all the cream and butter, and…….just sayin’.
